The wine takes its name from Ostuni, which lies between the high plains of the Murge and the Adriatic coast, and from the primary grape variety used, Ottavianello, which provides at least 85% of the must. Murgia (plural Murge) is a sub-region of Apulia (Puglia in southern Italy, corresponding to a karst topographic Plateau of rectangular Cinsaut or Cinsault (pronounced "san-so" is a red Wine Grape, whose heat tolerance and productivity make it important in Languedoc-Roussillon The remaining 0% – 15% may consist of Negroamaro and/or Malvasia nera and/or Notar Domenico and/or Sussumaniello grapes. Negroamaro, also Negro amaro, is a red Wine Grape variety native to Southern Italy. Susumaniello is a variety of red wine grape from the 'heel' of Italy [2] According to the DOC specification the colour may vary between cherry and a pale ruby red; the smell should be vinous with a delicate perfume and the taste dry and harmonious.
